Banana, one of the most produced fruits in the world, is harvested when it is still green. After its short storage period of 6-7 weeks, two important processes begin: degreening and ripening Firstly, if we define banana ripening; Ripening is the process of improving only the color of the outer skin of the fruit and bringing the fruit to the desired taste, color and quality. The yellowing and ripening process is carried out in specially designed rooms with heat and gas insulation, ventilation systems, and temperature and humidity adjustment. Bananas are kept in these special rooms from 3 to 8 days in certain temperature, humidity and ethylene values before being put on the market.
